Brown Rice Crispy Treats


These are a great alternative to the regular rice crispy treats. I have seen a few recipes for these so i added my own spin to them.

2 cups brown rice crispy cereal - you can also use chocolate brown rice crispies!
1/2 cup natural peanut butter - i like to experiment wtih different peanut butters such as cashew butter or almond butter
2/3 cup brown rice syrup
1/4 cup unsweetened coconut
1/4 cup dried cranberries, cherries or blueberries
1/4 cup of cashews
1/4 cup peanuts
1/4 cups dark chocolate chips or carob chips
Note: If you want to make them even healthier add 1/4 cup of ground organic flax seeds! However if you do that up the brown rice syrup to 3/4 cup.

heat the peanut butter and brown rice syrup until melted together over low flame. Meanwhile add the other ingredients together in a bowl. Pour the liquid over the dry ingredients and mix until combined. Put mixture into casserole dish and let set in the refrigerator for an hour and them cut into squares. Enjoy!

  1. I've made these without the nuts/nut butter or chocolate (due to our allergies) and they're still yummy. Brown rice syrup takes a little getting used to but if you are off sugar, it's super sweet! Thanks for posting! Jen

  2. Thanks Jen!! Yes, there are variations. I recommend them instead of the regular ones made with marshmallow which has high fructose corn syrup in it so even though its still a sugar, its a step in a better direction and you can always use less brown rice syrup.
